Saturated vs Unsaturated Fats. Which is healthier?
Saturated - Compound with only carbon carbon single covalent bonds.
Unsaturated - Compound with carbon carbon double /triple covalent bonds.
Fatty acids have carboxyl group (-COOH group)
Saturated fatty acids is hydrophobic, i.e. insoluble in water. Form plague that attracts other plague- like molecules, causes blood clots in arteries.
Unsaturated fats are healthier than saturated fats.
Unsaturated fatty acids - cis/trans. Able to undergo hydrogenation (addition of hydrogen to double bond) to form saturated fatty acid.
Cis : Not able to rotate in space. H atoms are on the same side. Causes a 'kink' in the molecule.
Trans: H atoms on opposite side.
Mono-unsaturated fatty acid : one carbon carbon double bond.
Fat = Glycerol + 3 Fatty Acids
Glycerol contains hydroxyl group (OH grp).
